Ma's Rabbit Stew
Have pa go hunting for a couple of nice young rabbits.
Skin and clean them.
Soak rabbits in cold ,salted water, overnight.
Cut up in pieces.
Dredge in flour and brown in hot fat.
Cover with hot water.
Add onions, celery, parsnips  to your liking.
Simmer until tender.
Remove rabbit pieces to platter.
Make flour dumplings drop  into the  liquid or drippings.
Cover and steam for 4-5 minutes.
Nellie's Greek Dish
Slice  layer of potatoes in a baking dish. Slice a layer of onions, then a layer of mangoes. Then slice a layer of hot dogs add 1/4 cup olive oil and nearly cover with cold water. Salt and pepper to taste and bake until tender, about 25 to 30 minutes at 350o.
Prairie pot Roast
use a 4 pound chuck roast. Season and brown on both sides in hot fat, in a large roaster with lid. Do not add water. Cover and place in 300o oven. About 3 hours. Then Add veggies, onion and potatoes. Salt and pepper. Cover and continue to roast another hour.
Add a little liquid if needed, just go easy on liquid if you want brown crusty potatoes.
Cranberry Tarts
2 cups whole cranberry sauce.
1/4 cup raisins
1/1/2 tbs molasses
2 tbs cornstarch
Cook until mixture thickens.
Spoon into baked tart shells.
Add ice cream.

Blackberry Dumplings
On a hot summer day it was a simple matter to pick blackberries, place them in a sweetened somewhat tough biscuit-like dough, wrap them in squares of cloth, and drop into boiling water.
In time they had a filling dessert especially if dumplings were smothered in sweetened and spiced creamy milk. which they called "DIP".
Aunt Bell's Chicken Loaf
Cook a chicken and remove meat from bone discard skin. Chop chicken meat into small pieces.  Sprinkle over meat  s&p , 1/4 cup sweet pickles chopped, 1/8 tsp celery seed, and one chopped hard boiled egg. Stir and place in a loaf pan and pour over it  one cup chicken broth,  which has been mixed with one tbs plain gelatin.  Place in refrigerator  until set then dip the pan in hot water a few seconds then turn out onto a serving platter.
This is a fine recipe for left over chicken or turkey. Using chicken base or bouillon cube to make one cup of broth to mix with the gelatin.
Dutch Honey
Into an iron skillet place one cup brown sugar, a pinch of salt, one cup white corn syrup, a big lump of butter, and one cup thick cream.
Stir until  dissolved and begins to boil hard for only five minutes. Remove from heat and let cool, then stir in one tbs vanilla or brandy flavoring.
Get the waffle iron out!..

Laura Ingalls Gingerbread
1 cup brown sugar
1/2 cup shortening
1 cup molasses
2 tsp. baking soda dissolve in 1 cup boiling water.
3 cups flour
1 tsp. ginger
1 tsp. cinnamon
1 tsp. allspice
1 tsp.nutmeg
1 tsp. cloves
1/2 tsp. salt
Stir all into cake mixture and mix well.
lastly add 2 well beaten eggs.
Bake 30 min's. 350o

Baked Ham in Milk
Bake thick slices of ham in water until done.  20-30 minutes. Drain off water. Add milk to cover, baste often.  Use the
milk  as gravy.
t.Broccoli Casserol
1 packaged chopped broccoli
1/2 cup chopped celery
1/2 cup chopped green pepper
1 small onion
2 cups minute rice cooked in 2 cups water
1 can cream of chicken soup
1/2 cup milk
1 cup cheese of choice.
Saute veggies in butter until tender, add other ingredients.
Pour into casserole and bake at 350o

Ham-Egg and Mushroom Sandwich.
1 cup ground  cooked ham
2 hard boiled eggs
1/2 can cream of mushroom soup.
Mix thoroughly . Spread on crusty hard rolls.
Fiddle around the dinner table like Pa did
